adapted from this recipe on the King Arthur Flour website
1 3/4 cups buttermilk
5 tablespoons butter, melted and cooled
1 1/2 cups unbleached all-purpose flour
1/4 cup yellow cornmeal
3/4 masa harina
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
optional additions to the waffle batter:
1 green onion
2 teaspoons ground cumin
2-3 chopped sun-dried tomatoes
Directions: In a medium-sized bowl, whisk together the buttermilk, eggs, and melted butter. In another medium-sized mixing bowl, whisk together the flour, cornmeal, masa harina, sugar, baking powder, baking soda, salt, and cumin if using. Add the dry ingredients to the wet, and whisk together. Fold in the green onion and sun-dried tomatoes.
Let the batter sit while the waffle iron heats to soften the cornmeal. Bake on the hot waffle iron until it stops steaming.
Yields approximately eight (less than full size) Belgian style waffles.
Top with crispy pork and/ or your preferred ingredients.
